Recipe: Andouille Sausage and Red Beans
This tasty dish can be served as a thick soup or on rice or polenta for a hearty meal. Perfect year round, but we love it for a fall/winter dish.

Ingredients:
1 Tbsp olive oil
½ onion, finely chopped
¼ lb. Andouille sausage link, chopped
16 oz. bag of frozen red beans (we used 13 Foods brand)
1-2 Tbsp Hotmaple Smokey Habanero
1 cup tomato sauce
1 Tbsp maple syrup
2 cups chopped kale
Kosher salt and freshly ground pepper
Directions:
1. Heat a saucepan on medium heat and sauté onion and sausage in olive oil with a little salt for about 10 minutes or until onions are soft.
2. Add red beans, ½ cup water, Hotmaple Smokey Habanero sauce, tomato sauce and maple syrup. Cook on medium, stirring for about 15 minutes or until beans are heated through.
3. Add kale and cook an additional 10 minutes.
4. Taste and season with salt, pepper, maple syrup and hot sauce.
